Try tracking with a simple spreadsheet or a grid.
It will be a little easier if you use your computer to do this, but if that is too cumbersome, it can certainly be done by hand.

List the names of the projects/tasks down the left side of the spreadsheet or grid. Along the top, list your status categories (outstanding items, due dates, etc.)Also include a column called "Status" and another called "Notes."

If you're not using a computer, pencil in (instead of using pen) the status of the project (eg. 40% done, 70% done, Complete, etc.)You can erase the last status, and put the new status in, each time the status changes.

You can also use this same idea, with a large erasable board if you have the space.
